Coca-Cola Liwet Rice


2 Pounds or 1 kg rice, 4 Cups or 1 liter Coca-Cola, 1 banana leaf shallots, thinly sliced, 10 Tablespoons vegetable oil, 3 bay leaves, 1 Tablespoon salt, 2 green onions, thinly sliced, 1 large red chili, thinly sliced, 1 green chili, thinly sliced, 20 bird's eye chilis, thinly sliced, 2 ½ Ounces dried anchovies.

  1. Set aside 3 Tbsp. shallots and 6 Tbsp. vegetable oil to be used later. Prepare Fried Anchovies for Topping: Wash dried anchovies, drain. Fry anchovies and remaining sliced shallots in 4 Tbsp. vegetable oil until half cooked. Add green onions, red chili, green chili and bird’s eye chilis. Mix well until chilis are cooked and anchovies are crisp. Set aside. Wash the rice and drain, set aside. Stir fry 3 Tbsp. shallots set aside earlier in 6 Tbsp. vegetable oil until fragrant. Place rice and Coca-Cola into rice cooker. Add sautéed shallot, salt and bay leaves. Stir occasionally. When Coca-Cola has been fully absorbed and rice is half cooked, place banana leave on top of the rice and fried anchovies on the leaf. Continue to cook until rice is fully- cooked. Serve while warm.
